I'm like the biggest sucker for ginger and/or molasses cookies. Like I LOVE THEM. So much.
And I'm not really into just totally cutting out everything when I 'diet.' I hate dieting so much. Even on a day 1 it makes me feel very deprived. So, in order to still eat yummies, I just try to bake healthier versions. You feel me? So here you go, a healthier and still mega delicious version of ginger cookies.
The only problem I am running into now is that I can't stop eating them LOL.
