Ever since I had Convention for work a few weeks ago, my eating/meal prep has been mega crappy. I have slacked so much! I'm working to get myself back on track before the holidays set in... we all know that those can be deadly for our health.
I didn't have a plan for breakfasts last week, so I was making stuff on the fly each morning (arg, I really do hate this cause its so much easier to eat unhealthy foods when you don't have anything prepared) and I created this little gem. Its full of spinach, kale and berries. So like, so much goodness. The almond butter gives it a delicious after taste and the yogurt gives it just the right amount of sweetness.
PS- just to be clear, you can't taste the bitter kale or spinach at all. You're getting all the nutrients and still eating something yummy.
This is husband approved... so also a good excuse to get some green food into your man.
